Tarima ICE

VINEYARD: The vineyards are located in the area of Pinoso, at an altitude ranging between 650 and 700 metres above sea level. In this continental Mediterranean climate, the Macabeo variety is grown on limestone soils characteristic of the region. This is a young vineyard, around 10 years old, whose natural vigour combined with an early harvest brings freshness and liveliness to the grapes while maintaining excellent natural acidity. This becomes the ideal starting point for crafting a wine with balance and varietal expression.

WINEMAKING: The wine is made in stainless steel tanks, allowing precise temperature control and preserving the natural qualities of the Macabeo grape. Harvest takes place in August, at the optimal moment to maintain its natural acidity and fresh profile. The musts, kept extremely clean, ferment at low temperatures, around 14 ºC, enhancing the aromatic expression of the variety and preserving its vibrancy. This process also helps retain a slight natural sparkle. The result is a wine with bright acidity and a fresh, dynamic character, especially enjoyable and versatile, ideal even when served over ice.

TASTING NOTES: Bright pale yellow colour. On the nose, aromas of white fruit such as apple, melon and quince stand out, accompanied by subtle citrus hints of grapefruit. On the palate, it is fresh, lively and balanced, with marked acidity and a slight touch of natural spritz that adds lightness. Clean and refreshing finish, with good persistence and a fruity character.
