VINEYARD: Multiple vineyards located between the Sierras de Salinas, Umbría and Sierra de La Sima.
YEAR OF PLANTING: Between 1982-1987.
VITICULTURE: Traditional dryland viticulture. Sustainable viticulture, with the utmost respect for our environment using only natural fertilizers of organic origin. Manual harvest.
PRODUCTION: 3kg per plant.
ALTITUDE: 600-750 meters.
SOILS: Limestone with little capacity to retain water, covered with stones forming a platform at the foot of the mountain, thus preventing erosion and acclimatizing the soil, especially in summer.
CLIMATE: Continental, with some Mediterranean influence. A unique microclimate that is the result of the convergence of the three mountain ranges mentioned above, combined with high altitudes, which are exclusive to this area of Alicante.
HARVEST: Early October.
PREPARATION: The grapes are meticulously classified in the winery. Fermentation in stainless steel tanks with native yeasts. No added sulfites, with minimal human intervention.
