VINEYARD: FINCA LAS CRUCES located in the eastern region of La Mancha

We have extremely sandy soils. These are amongst the poorest soils you can use for viticultural purposes. The very deep sandy soils are blended with small chunks of pure chalk. On the surface the sandy soil is blended with red clay to the depth of 30 cm (1 ft.)

Harsh continental with scant rainfall and cold winters that see snow. Dramatic temperature variations between day and night due to the altitude.

Traditional, sustainable, dry-land viticulture is carried out, where we respect our environment to the maximum. The harvest is carried out by hand at the end of August, obtaining low yields of around 2-3 kg per plant.

WINEMAKING: Selected wine yeast. Pellicular maceration, during 12 hours the grape skin and the must are kept in contact without starting to ferment in order to obtain a more aromatic must.

Then the wine is stainless steel fermented at low temperatura of 14 Each variety are vinified in separate lots.
