Sauvignon Blanc


YEAR(S) PLANTED: 10-year-old vineyards.

GRAPE VARIETAL: Sauvignon Blanc.

VITICULTURE: Traditional dry farmed viticulture.

YIELDS: 3-4 kg per plant.

ALTITUDE: 650-700 m.

SOILS: The soil is dry and shallow, and is primarily composed of limestone, which is the mother rock. The soil is intermixed with large chunks of pure chalk.

CLIMATE: Continental, with some Mediterranean influence. A very unique microclimate that is the result of the convergence of the three mountain ranges, combined with the high altitudes, that are unique to this sub-region of Alicante.

HARVEST: Middle of August.

WINEMAKING: After a period of cold maceration and after the extraction and clarification of the must, slow fermentation takes place at a controlled temperature of between 13ºC and 15ºC, so as to protect and preserve the primary aromas which are such a feature of this variety. Once fermentation is complete, the wine is left on its fine lees to increase the sensation of volume on the palate and to improve its capacity for ageing.
